Chicken Broccoli Rice

 1 lb. chicken, cubed & shredded

1 lb. frozen broccoli or fresh

1 1/2 cup brown rice

salt, paprika

3T flour

3T butter

2 cup milk

8oz grated sharp cheddar

1/2 can cream of mushroom (pacific foods organic)


Preheat 350

-Mix cooked rice, steamed broccoli and shredded chicken

-For sauce: heat milk in microwave 30 sec.  Set aside.  Melt butter in saucepan.  Add flour & stir until incorporated, but not browned.  Add milk.  Bring to boil, whisking continuously.  Reduce heat, gradually add cheese, whisking to incorporate, until melted.  Add cream of mushroom gradually.  Whisking until incorporated.  Pour sauce over dry ingredient & combine well.  Season to taste with salt.  Pour to greased 9x13.  Cover w/ foil.  Bake 45 mins.  Uncover & bake 15min.  Garnish with paprika.
