Coconut Pie

3/4 cup sugar

1/4 cup flour

pinch of salt

1 cup milk

1 cup pet milk

3 egg yolks

1/3 stick butter

1 tsp vanilla

1 cup coconut

pie crust


In a sauce pan, combine: sugar, flour, salt.

Slowly stir in milks.  Add 3 egg yolks to warm (not hot) mixture.

Cook on medium high, stir often until thickens & bubbles.

Add butter, vanilla, and coconut.

Return mixture to a boil and pour into pre-baked pie crust.  Refrigerate.
