Pork Tacos

Ingredients 

3.5 lb bone-in pork shoulder, butt
Juice of 1 orange
Juice of 1 lime
1 Tbsp kosher salt
1 Tbsp ground cumin
2 tsp ground coriander
1/2 Tbsp  dark brown sugar
1/2 Tbsp  ground black pepper
2 cloves minced garlic


Step 1
Place pork in a large shallow bowl and pour the orange and lime juice over it, then turn the pork to coat.

Step 2
In a small bowl, mix the salt, cumin, coriander, brown sugar, black pepper and garlic.  Discard excess juice from the bowl containing the pork, then rub the pork all over with the spice mixture.  Cover with plastic wrap and refrigerate overnight.

Step 3
Cook on low in crock-pot for 6 - 6 1/2 hours.  Serve with flour tortillas, cilantro, cojita cheese, lime, salt, and green sauce.
